Fall is just about here, and when I think of Fall, I think of apples being harvested, and shorter days with cooler weather. I also think about school just starting, children lining up to get on the bus, the smell of a newly sharpened pencil, the feel of a fat crayon or a bottle of glue in my fingers.<\/p>\n<p>I recently made an apple cake and my hubby loved it! Here&#8217;s the recipe if you&#8217;re interested. I used Granny Smith apples, but I&#8217;m pretty sure just about any kind of apples can be used!<\/p>\n<p>When it&#8217;s finished, enjoy a slice with a nice, cold glass of milk! Yum!<br \/><a href=\"http:\/\/1.bp.blogspot.com\/_l0Jv-SLk81k\/SrGHNLlpTcI\/AAAAAAAAC3g\/0c7tgAX-OM8\/s1600-h\/pouringmilk.jpg\"><img decoding=\"async\" style=\"display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 398px; height: 400px;\" src=\"http:\/\/1.bp.blogspot.com\/_l0Jv-SLk81k\/SrGHNLlpTcI\/AAAAAAAAC3g\/0c7tgAX-OM8\/s400\/pouringmilk.jpg\" border=\"0\" alt=\"\"id=\"BLOGGER_PHOTO_ID_5382231690203188674\" \/><\/a><\/p>\n<p><u><span style='font-family:\"Comic Sans MS\"'>Apple Cake<o:p><\/o:p><\/span><\/u><\/p>\n<p>2 eggs<br \/>2 cups sugar<br \/>1\/2 cup oil<br \/>1\/2 teaspoon salt<br \/>2 teaspoons baking soda<br \/>2 teaspoons vanilla<br \/>2 teaspoons cinnamon<br \/>2 cups flour<br \/>4 cups peeled, chopped, raw apples<br \/>1 cup chopped nuts (I used pre-chopped macadamia nuts)<\/p>\n<p>Combine all ingredients and pour into a 9&#8243; X 13&#8243; pan. Bake for 1 hour at 350 degrees.<\/p>\n<p>Icing (optional) &#8211; I made the icing and placed it on the cake! It was good! I&#8217;d recommend using this cream cheese icing, but, if you&#8217;re out of cream cheese, you can try using vanilla\/buttercream icing instead.<\/p>\n<p>1\/2 stick butter<br \/>2 teaspoons vanilla<br \/>1 1\/2 cups confectioner&#8217;s sugar<br \/>6 oz. cream cheese<\/p>\n<p>Mix until smooth. Spread over cake while still warm. Sprinkle chopped nuts over icing if desired.<\/p>\n<p>I want to say that I placed the nuts directly into my cake batter? But, I might be mistaken about that! I need to ask my hubby! I don&#8217;t recall sprinkling nuts on top of the icing, but I might have!
